Fun Outdoor Activities

I hope you are all having a great Friday and that your weekend is a time of relaxation!  In Cordova, we're gearing up for Copper River Nouveau, which (I'm gathering) is a large auction and dinner event that raises money for the Prince William Sound Science Center.  I'll be helping with setup and teardown.  For a small town, there are a lot of fun community activities here!

Over the last week or so I've gone out on some fun hikes and other outside activities, and I have lots of pictures! I hope you like them!

We hiked out on the Alaganik Slough, which is a large area of soft, muddy, swampy ground on the Copper River Delta.  The Slough is full of wildflowers, birds, fish, bears, and moose.  There's a beautiful boardwalk and a little trail directly through the Slough, which was a lot of fun to walk through!

That dark blob in the middle, below the dark green trees, is my first moose sighting!

Wil and I also went canoeing on Lake Eyak, the lake where the bunkhouse resides.  It was awesome!

You may have noticed that the vast majority of my posts on this blog have something to do with food. I try to bring in travel, work, life, family, weather (I am an atmospheric scientist, after all, and we finally had a big snow here in Madison), but it really all comes down to food. It snowed here! Unfortunately, the city of Madison doesn't pull out the plows until after  the majority of snow has fallen.   On the plus side, our apartment complex looks like Narnia! I have been all over the country lately, and I am very, very tired.  Thankfully, in a few more weeks my semester will be over! I won't have to take classes any more, ever!  Unless I decide to go back for a PhD, but that is a decision that Future Sam will make. As you may have noticed, I try to share my cooking adventures on this blog because that's where I feel most adventurous.  I'll start with my success story from last week: Lemon-Cumin Chicken with a Spinach-Mint Pesto.  I know this sounds like a mashup of strong flavors that will be terrible, and I felt trepidation initially.  However, the marinade and pesto came together easily, and grilling chicken isn't difficult.  The one caveat I will list here is that this dish is not for the faint of heart!  The flavors, while not at all overwhelming, are bold--it's the cumin, really.  If you normally like things with cumin, you should absolutely cook this.  I'll put the recipe and link below...

Location: Cinque Terre, Italy

From Switzerland we traveled to arguably the most beautiful place on the planet: Cinque Terre, Italy. Some might prefer the Caribbean for sparkling, clear waters and tropical paradise-ness, but this has totally got it beat in my book! Cinque Terre, or "Five Lands", sits on the Mediterranean coast as part of the Italian Riviera. The coastline, the five cities that make up Cinque Terre, and the surrounding hills and vineyards are nationally protected and also a UNESCO World Heritage Site. The area has been settled and farmed for about 1000 years, and is known for its wine, olives, anchovies, and pesto. Wil and I tried them, and they are all the best we've ever tasted!
